Kaz Yuki - Owner and Head Chef

The Yuki Family

our story

Born and bred in Tokyo, Japan owner/chef Kazuto (Kaz) Yuki spent his early years helping out in his grandparent’s eel restaurant.

After immigrating to Australia in 2002, Kaz left a career in architecture to pursue his life-long passion for cooking, honing his skills in some well known Noosa restaurants.

During this time he noticed a need for good quality sushi in the region. Sushi which paid homage to the deep traditions of Japan, starting first and foremost with respect for the way the rice is prepared. It was his marriage to Aussie-born Suzi and the birth of their daughter which was the real impetus for Kaz to follow his dream and open his own business. Creating Sushi Wave was the perfect way for Kaz to find his authentic place within the community he loved and connect his daughter to her Japanese heritage.

At Sushi Wave, Kaz proudly heads a full Japanese kitchen and dedicated team dishing up the freshest sushi and sashimi as well as mouth-watering Izakaya-style hot dishes. His 12 year old daughter is already setting the tables.

“When one tugs at a single thing in local business he finds it attached to the rest of the community.”

Adapted quote by John Muir

Sushi Wave strives to operate as a socially and ethically responsible business, embracing the values of honesty, integrity and respect for all.

With the knowledge that for every dollar spent at a locally owned business, 70 cents remains in the community, Sushi Wave proudly employs locals, supports local businesses and contributes to community events like Peregian Originals, school fundraisers and local charities. Kaz and his family also take part in an annual Japanese cultural morning at Peregian Community Kindergarten where his daughter attended in 2012. Each year he teaches sushi making to a new wave of enthusiastic 4 year olds.

At Sushi Wave we are dedicated to minimising our environmental impact and are continually monitoring and making improvements to our water and energy use, waste management and packaging.

I feel more confident than ever that the power to save the planet rests with the individual consumer.
